Just to clarify, the engine converts non-American spelling in preprocessing, but you still can use the non-American spellings in keyphrases with a raw tag if you really feel the need to. I actually have a couple of those myself.
However, a)not recommended for beginners and b)there's no reason to use those unless you want your bot to make some observation about how it's spelled. Example:
AndAliceSays: any favourite bands?
Pete Puma: Oh, you put one of those 'U's in favorite. Are you a Canadian, limey, kiwi, or Aussie?
As far as using them in responses, it really doesn't make any difference.

A kiwi is someone from New Zealand. A limey is either a British sailor or an English person. Yes, an aussie is an Australian.

Pete uses "Canuck" as well, but I added a plugin to mix it up when I saw Brother Jerome's are you a Canuck (re) keyphrase. I can't make life too easy for Psimagus.

My senior year of college, there was a guy on my wing named Donovan who was from South Africa. His accent was kind of like the British accent, but I could tell the difference. He was fanatical about Rugby.

I met a linguist once, who could tell you where you were born,(to what neighborhood) and most places you had lived, by having you say just a few phrases. It was spooky.
